No Yeast Cinammon “Flat” Bread?


Tonight I promised the kids we would make bread from scratch instead of buying and because I had ALL the ingredients…..I did not. The key thing I was missing was the glue that holds all bread together YEAST!!!!

In a panic, I scoured the internet looking for any bread recipes that did not have yeast because surely not everyone uses it, right?  I found this great recipe which I adapted for my daughter and decided to call it No Yeast Cinnamon “Flat” Bread…….I kid you not!!!!  Adapted from Veg Bon Vivant!


3 cups Robin Hood Flour

1 tsp Salt

1 tbsp Baking Powder

2 tbsps Butter (unsalted or salted) softened

1 tbsp brown sugar

1 tsp cinnamon

1 1/2 cups warm water



Heat the oven to 350 degrees, greasing a 9×13 baking dish.  After you can mix all of the dry ingredients together (I don’t have a food processor or a bread maker but if you do, great) and add the butter and one cup of water.  Keep kneading to a consistency that you like. When finished, you can put the dough into the pan and spread it out it reaches all four edges.  Bake for about 40 minutes.  Let cool then serve on its own or with a sauce of your choice.  For this one, I chose blueberry sauce which I made from scratch (I’ll have to post that as well).

Variations: The original recipe that I got this from, did not use sugar or cinnamon but instead used herbs.  Which is great if you like that sort of thing.  I imagine as another option you could use milk instead of water and you could use grated cheese in the dough as well for a Cheese Bread. You could even glaze the top with butter for an added bonus.  Try it and let me know what you think.


This was unbelievably good.  When I opened the oven door, the amazing cinnamon scent transported me back to my childhood.  When I cut it, there was the faint smell of cinnamon as well and then I paired it with the home made blue berry sauce you see in the picture and it was not too sweet.
